Chilled Napa Cabbage with Cilantro and Shallots

head of Napa Cabbage
2 cups chopped cilantro (lightly packed)
3 diced shallots
really good olive oil
white wine vinegar
salt & pepper

Macerate (soak) the shallots in white wine vinegar for 15 minutes. Toss with shredded cabbage, cilantro, olive oil (lightly coat all) and salt/pepper.


This is the perfect accompaniment for flank steak.
