Lemon and Pepper Grilled Halibut

serves 2

¼ cup fresh lemon juice
1 large garlic clove, pressed
10- to 12- ounce piece halibut fillet
olive oil
1 teaspoon lemon peel, finely chopped
lemon wedges


Place lemon juice and garlic in small dish. Add halibut and turn to coat. Refrigerate 30 minutes to 1 hour.

Preheat barbecue (medium-high heat). Brush halibut with olive oil, rub with lemon peel and season generously with pepper and salt. Grill halibut until cooked through, turning once, about 8 minutes total. Transfer to plates and serve with lemon wedges.
