Chipotle Spiced Beef and Bean Chili

serves 4 to 6

1 pound lean ground beef
1 onions, chopped
2 chipotles in adobo
2 teaspoons Kosher salt
2 teaspoons ground cumin
¾ teaspoons garlic powder
1 teaspoon chili powder
10 ounces diced tomatoes (with green chile peppers)

1 30-ounce can kidney beans, drained and rinsed
3 teaspoons hot pepper sauce (optional, based on how spicy your family likes it)
¼ cup shredded Cheddar cheese
Sour cream, optional


In a large sauté pan, brown ground beef with onion, chipotle peppers and 3 tablespoons of the adobo sauce; drain well. Mix the salt, ground cumin, garlic powder and chili powder in a small bowl. In a large stock pot, combine beef mixture, tomatoes, beans, and spice mixture. Adjust to taste with hot pepper sauce. Heat through and serve garnished with Cheddar cheese and optional sour cream.
