serves 4
1½ pounds skinned cod filets, divided into 4 servings
1 onion, thinly sliced
4 tomatoes, sliced
2 tablespoons olive oil
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
½ cup sour cream (maybe mixed with crème fraîche)
½ cup water
Heat oil and butter in pan and fry onion till it is translucent. Place fish and tomatoes in pan, add salt and pepper. In a small bowl, mix sour cream and water and pour over fish. Let simmer for 6 to7 minutes, or until it is done.
Serve with steamed potatoes.
This is a super simple way to prepare cod.
