36 ounces very dry ginger ale (GUS’ or similar)
1 cup cucumber juice (1 – 3 cucumbers)
3 tablespoons lemon juice
2 large sprigs rosemary
Peel
and coarsely chop the cucumbers, seeds and all, and purée in a blender. Strain,
pressing the pulp with the back of a spoon to extract all juice to make 1 cup.
Combine
ginger ale, cucumber juice, lemon juice in a large pitcher. Add rosemary
sprigs. Serve over ice.
Strips
of peeled ginger can also be added to enhance the ginger flavor.
We find more and more friends are taking
a break from alcohol. I try these days to always have one non-alcoholic adult
beverage available when I entertain and I find they go fast. This drink is sort
a virgin Pimm’s Cup and, like that drink, can be made with apples, lime and
other combinations. It has a lovely pale green color that looks pretty served
up.
